                實際上很多人都知道油煙對人體潛在著危害性,畢竟近年來網絡發展得異常迅速,大量有關油煙危害性的信息鋪天蓋地的出現在網絡的各個角落。

                隨著人們對油煙危害性的逐漸認識,有一種獨特的見解忽然出現在網絡之上:油煙的危害性被誇大,這都是食品加工廠商家們的陰謀!

                這個見解其實不無道理,中國有上千年的飲食文化,而國外也同樣有著源遠流長的餐飲習慣;遠的不說,以我們自身的生活為例,很多人都有自己炒菜做飯的習慣,每天也會接觸到大量的油煙,但也沒因此而出現什麽呼吸道的嚴重疾病。

                當然,這個言論不是在完全否定油煙潛在危害性,在科學儀器的檢測中,油煙當中的確含有不飽和烴類、飽和烴類、多環芳烴、雜環化合物以及醇、醛等有毒、致癌物質,這是不爭的事實。

                那麽,油煙的危害性真的被誇大了嗎?

                作為尋常百姓的我們,是不是真的可以不用理會那在鍋裏翻滾而出的油煙呢?

                其實不然,凈化油煙的原由不但是為了保護人體健康,更是從保護大自然環境的角度出發。

                世界衛生組織WHO曾做出聲▓明:在中國,油煙凈化器空氣汙染的主要來源之一,就是由於烹飪所產生的油煙油煙凈化。

                而早在2013年在當時還是霧霾彌漫的北京就做過一次科學調研,在霧霾嚴重、PM2.5爆表的北京,從餐飲源█貢獻出來的PM2.5就已經達到了13%!這個數字已經與北京的地面揚塵、工業排放PM2.5的數值相當,除此之外,機動車和燃煤的PM2.5排放則達到了25%、19%!

                所以近年來無論是北京、還是各個大型城市,為了追求質量更高的生活環境和城市面貌,都開始了減排、限行、整頓餐飲排放、提倡低碳出行▓等措施。

                雖然對於人們日常的烹飪料理所制造油煙的確不會對人體造成多大的損害,畢竟我們做飯的時間也不會太長,但對於一些常年需要工作在廢氣的廚師裏面,他們所面對的油煙量卻是我們難以想象的。

                據統計,以北京一家每天經營6小時的中小飯店為例,按照北京的油煙排放標準2mg/m3來計算,這家飯店一年的油煙排放量能█輕易超過100斤!

                如果這家飯店沒有遵從法規隨意排放油煙的話,它一年的油煙排放量就是以1000斤的倍數計算,全北京有上萬家這類的中小飯店,如果不加以約束,光這些飯店一年就會帶來千萬噸規模的油煙被排放到室外,而身處廚房當中的工作人員也會每天都被籠罩在充滿了油煙的環境當中,那是十分可怕的一副景象。

                我國的餐飲業也是日新月異的態勢,排出室外的油煙也只會越來越多。大自然的自凈能力是有限度的,一旦超出了這個限度,大自然的生態系統就會隨之崩潰,最後倒黴的還是人類自己。

                另外,隨著全球環境的不斷惡化,各國也開展了不同程度的環境整治措施。顯然,先汙染後治理的發展理論已經不符合我國的發展戰略,所以我國也加大了整治環境、防治環境惡化的力度,而其中,油煙整治就是其中的一環。

                那麽,怎麽去整治油煙問題呢?

                油煙的源頭主要有三個:1、家庭;2、餐飲店;3、廚房;

                雖然家庭的數量眾多,但每個家庭每天產生的油煙量有限,而且監管難度高,所以▓目前我國還沒有太過重視家庭油煙的整治。

                而對於餐飲店、食品加工廠這些每年會產生大量油煙的單位,我國就出臺了數項法律法規去約束它們的生產行為不應對環境產生過大影響。

                而室內器的出現,不過是順應這股潮流而產生的一個行業設備,所以並不存在陰謀一說。

It is an indisputable fact that oil fumes do contain unsaturated hydrocarbons, saturated hydrocarbons, polycyclic aromatic hydrocarbons, heterocyclic compounds, alcohols, aldehydes and other toxic and carcinogenic substances in the detection of scientific instruments.


                So, is the harmfulness of soot really exaggerated?


                As ordinary people, can we really ignore the oil fumes rolling out in the pot?


                In fact, the reason for purifying oil fume is not only to protect human health, but also to protect the natural environment.


                WHO has made a statement: in China, one of the main sources of air pollution from cooking fume purifiers is fume purification.


                As early as 2013, when Beijing was still full of haze, a scientific survey was conducted. In Beijing, where haze was serious and PM2.5 burst, the contribution of PM2.5 from catering sources has reached 13%. This figure has been comparable to the ground dust and industrial PM2.5 emission in Beijing. In addition, the PM2.5 emission of motor vehicles and coal-fired has reached 25% and 19%.


                So in recent years, in order to pursue a better quality of living environment and urban outlook, both Beijing and large cities have begun to reduce emissions, restrict travel, rectify food and beverage emissions, and promote low-carbon travel and other measures.


                Although the cooking fume produced by people's daily cooking does not cause much harm to the human body, after all, the cooking time will not be too long, but for some cooks who need to work in exhaust gas all the year round, the amount of fume they face is unimaginable.


                According to statistics, taking a small and medium-sized hotel in Beijing which operates six hours a day as an example, according to Beijing's smoke emission standard of 2mg/m, the smoke emission of this hotel can easily exceed 100 kg a year!


                If the hotel fails to comply with the regulations and emit oil fumes at will, its annual oil fume emissions are calculated at a multiple of 1,000 kg. There are tens of thousands of such small and medium-sized hotels in Beijing. Without restriction, these hotels alone will bring tens of millions of tons of oil fumes into the outdoors in a year, and the staff in the kitchen will be covered with oil fumes every day. In the environment, it is a terrible sight.


                China's catering industry is also changing with each passing day, and the smoke discharged outdoors will only be more and more. Nature's self-purification ability is limited. Once beyond this limit, the ecosystem of nature will collapse. Finally, it's the human itself that is unlucky.


                In addition, with the deterioration of the global environment, countries have also carried out various degrees of environmental remediation measures. Obviously, the development theory of pollution first and then pollution control is not in line with our development strategy, so our country has also increased the efforts to control the environment and prevent environmental deterioration, among which, lampblack control is one of the links.


                So, how to rectify the problem of lampblack?


                There are three main sources of lampblack: 1. family; 2. restaurant; 3. kitchen;


                Although the number of families is large, but each family produces a limited amount of oil fume every day, and supervision is difficult, so at present our country has not paid too much attention to the treatment of family oil fume.


                For restaurants and food processing factories, which produce a large amount of oil fume every year, China has issued several laws and regulations to restrict their production behavior, which should not have too great impact on the environment.


                The emergence of indoor appliances is just an industry equipment that conforms to this trend, so there is no conspiracy.
